慢煮經典香妃雞——溫柔的鹹香加特製滷水,拌著皮香肉厚的黃油雞,及鮮製的沙薑蓉。

以半日鮮的龍崗雞入饌,肉滑而不韌,皮爽帶油香。半日鮮的成本比普通冰鮮雞貴3-4倍,即日處理鮮雞,可保持肉質口感的彈性,而慢煮的方法也讓肉質更入味又不失嫩滑。

此道菜的加熱方式

① 完全不解凍,將透明真空袋放進滾水內翻熱30分鐘,其間不用蓋上煲蓋。

② 前一天將雞放至0-4度雪藏格解凍:水滾後熄火,將整包雞放到熱水中浸30分鐘即可享用,記得水要蓋過整隻雞。

建議最佳食用日期是6個月內,因為在冰格存放大久,會令肉質改變。
